CARMELIZED MIXED NUTS MIRABELLE 1 1/2 cups water 1 1/2 cups sugar 1/2 cup honey 3 cups hazelnuts 3 cups blanched almonds 3 cups roasted cashews 3 cups pecans 3 cups pistachio nuts vegetable oil for greasing the foil Kosher salt to taste cayenne pepper to taste Method Preheat oven to 350 degrees F. In a small saucepan bring the water, sugar and honey to a boil. Combine all the nuts in a large bowl. Pour the hot sugar liquid over the nuts and stir the mixture until the nuts are well coated. Cover a sheet tray with foil and grease it lightly. Drain the nuts of their excess liquid and transfer them to the sheet tray, spreading them evenly. Bake the nuts for 10 to 2 minutes, or until they are caramelized and golden. Remove the nuts from the oven and sprinkle them with the salt and cayenne to taste. Makes 15 cups mixed nuts.
